Black Salad

Smooth chocolate, sharp Parmesan and savoury balsamic vinegar
perfectly coalesce in this surprisngly sweet and simple salad.

2 heads red leaf lettuce
1 square of semisweet baker’s chocolate
2 Tbsp yellow mustard (or Dijon)
1/4 cup balsamic vinegar
3/4 cup canola oil (or olive oil)
salt and pepper, to taste
2 Tbsp grated Parmesan cheese

1. Coarsely chop lettuce.
Place in a large bowl. Grate the chocolate over the leaves. Set aside.
2. In a separate bowl, whisk together mustard and vinegar. Add oil slowly to prevent separation. Season with salt and pepper to taste.
3. Drizzle the dressing and sprinkle Parmesan over salad. Toss together with hands or spoon. Serve immediately.

Yield 4 to 6 servings
