Cherry Nut Jewel Bars

The Market 520

This colourful Market 520 favourite can be made well ahead, since it freezes well. The buttery crust provides a smooth base for the rich chocolate and nuts with bursts of sweet, juicy cherry.

1 1/4 cups flour
1/3 cup brown sugar, firmly packed
3/4 butter, softened

1 egg
1/2 tsp salt
1/3 cup brown sugar, firmly packed
1 1/2 cups salted mixed nuts
1 1/2 cups candied cherries, halved
1 cup dark chocolate chips

1.  Preheat oven to 350˚F.
2.  In a large bowl, combine flour and 1/3 cup brown sugar.
3.  Cut in butter until the mixture resembles coarse crumbs.
4.  Press mixture evenly into an ungreased 9″ x 13″ baking pan.
5.  Bake for 15 min. Set aside.

1.  In a large bowl, beat egg slightly.
2.  Whisk in sugar and salt.
3.  Add nuts, cherries and chocolate.
4.  Toss lightly to coat ingredients.
5.  Evenly spoon over baked crust.
6.  Bake 20 min. Cool. Cut into bars.

Yield 2 dozen bars
