cinna-mint meringue kisses

Whether a prelude to an evening of romance, or a punctuation to a fine dinner, these miniature meringue kisses make the ideal after dinner mint.

­6 egg whites
1 1/2 cups sugar
1/2 tsp cinnamon extract
1/2 tsp peppermint extract
pink paste icing colour

1. Preheat oven to 175˚F.
2. Stir egg whites and sugar together in metal bowl over pan of boiling water.
3. Remove from heat. Beat on high until stiff peaks form. Fold in extracts and colour.
4. Pipe meringues into kiss shapes with a star tip.
5. Bake on parchment lined baking sheets for 1 1/2 hours until crisp, but not browned.

Yield: 24.
