Manitoba Arctic Char with Fruit Salsa

Prepare your choice of side for this flaky fish. Chef Helena recommends basmati rice cooked with lime juice or summer potato salad.

1 cup chopped fresh pineapple
1 cup chopped fresh mango
1 cup chopped red pepper
1/2 cup chopped red onion
1 tsp lime juice
1/2 tsp red pepper flakes
2 Tbsp honey
4 fillets Manitoba Arctic char
salt & pepper to taste

1. Preheat oven to 400°F.
2. Place Arctic char on parchment lined sheet pan. Sprinkle with salt and pepper. Place in oven for 10-15 mins. Char should med-rare, flaky but still soft.
3. Combine first 4 ingredients in a bowl, adding lime juice, chile flakes and honey.
4. Serve fish warm and topped with fruit salsa.

Yield 4 servings
