Manitoba Bison Stew

Slow cooking gives all the flavours in this hearty bison stew time to properly mature and mingle. The apples and red wine add a sweet touch to this memorable Manitoba meal.

2 cups chopped onions
1 cup chopped celery
1 cup chopped carrots
3 cloves chopped garlic
1 medium-sized apple, cubed
1 cup cubed sweet potato
1 1/2 cups stewing bison
1/4 cup red wine
1/4 cup water
1 tsp black pepper
1 tsp salt
1/2 tsp rosemary
1/2 tsp Worcestershire
1 bay leaf

1. Put all ingredients in a large stewing pot, layering the ingredients on top of another.
2. Cover and cook on low heat for at least 4 hrs.

Yield 6 servings
