Miso Soup

Miso soup is made from a paste of fermented soy beans. It is traditionally garnished with ingredients that reflect the season. Here, tofu, seaweed and green onion make an appearance. Miso paste, bonito flakes and dried seaweed are all available at Asian grocery stores. 

Ingredients
4 Tbsp miso paste
1 Tbsp bonito flakes
6 cups water
1 pkg firm tofu, cubed in 1 cm pieces
2 green onions, chopped
2 Tbsp dried seaweed

Method
1. In a large pot, bring water, bonito and seaweed to a boil. Remove from heat.
2. Add cubed tofu and miso paste. Stir until well combined.
3.  Just prior to serving, add green onions for garnish.

Yield 6 servings
