Oven Baked Croissant Pudding with Apples and Cranberries

Ingredients
Pudding
4 day-old croissants
4 eggs
2 cups milk
1/4 cup butter, melted
1/4 cup & 2 Tbsp sugar
1/8 tsp cinnamon
Beans of 1 vanilla pod
3/4 cup raisins
1/2 cup chopped toasted pecans
1/4 cup honey
2 apples, diced
1/4 cup cranberries
1/8 tsp nutmeg
Juice of one lemon

Method
Pudding
1.   Preheat oven to 350˚F. Grease an 8×8 casserole dish with butter. Set aside.
2.   Take the day-old croissants and dice into large pieces.
3.   Crack the eggs into a mixer. Whisk them together before adding milk, sugar, cinnamon and vanilla beans. Whisk again. Add the raisins and pecans.
4.   Add croissant pieces to pudding mixture and stir together with a spoon. Do not over mix. Let this mix soak for 30 minutes until the croissants swell with the liquid.
5.   In a sauce pan, heat lemon juice, honey and diced apple. Reduce by half and let cool.
6.   To the sauce pan, add the cranberries and the pudding mixture. Pour pudding into greased casserole dish.
7.   Place dish in a bain marie and bake for 35-45 minutes.

Yield  8 servings
