Lovey’s BBQ and Smokehouse
Baked beans get a southwestern twist thanks to an intriguing mix of sweet and spicy.
1 medium onion, diced
1 green pepper, diced
1 Tbsp oil
1 Tbsp mustard
2 Tbsp Lovey’s All-Purpose Rub (see rib recipe)
2 cups ketchup
1 cup brown sugar
2 – 16oz cans of pork and beans
2 – 16oz cans kidney beans
2 – 16oz cans mixed beans
1 – 16 oz can tomato sauce
6 bacon strips
1. Preheat oven to 350 °F.
2. In a pot over medium heat, add oil. Sauté onions and peppers until soft.
3. In a bowl, combine all remaining ingredients except bacon.
4. Pour mixture into a casserole dish. Lay bacon strips across top.
5. Cover with foil and bake for 45 mins.
