Shanghai Burger

This bright burger imparts an Asian flavour profile through chile sauce laced mayonnaise and ginger bright crunches of slaw in each bite.

Asian Slaw
1 Tbsp fresh ginger, peeled and finely grated
2 Tbsp white wine vinegar
1 tsp sesame oil
1 tsp honey
pinch sea salt and black pepper
1/4 cup red pepper, julienned
1/4 cup sugar snap peas, julienned
1/8 cup carrot, julienned
1/8 cup red onion, julienned
1/8 cup bean sprouts

Sweet Chilli Mayo
1/2 cup mayonnaise
1 Tbsp Sriracha sauce
4 Tbsp sweet chilli sauce

4 fresh burger buns
18 oz free run or organic chicken breast, butterflied 4 pieces (your butcher can do this for you)

Asian Slaw
1. Whisk together ginger, vinegar, sesame oil, honey, sea salt and pepper.
2. Toss remaining veggies in ginger vinaigrette. Can be done a few hrs before serving to marinate.

Sweet Chilli Mayo
1. Whisk all ingredients together until combined.

1. Lightly season chicken breast with salt and pepper, grill.
2. Lightly toast bun, spread both sides with sweet chilli mayo.
3. Place grilled chicken on bottom half. Pile high with Asian slaw.
4. Position top bun half.

Yield 4 burgers
