Summer Fruit Rolls

Fresh seasonal fruits and herbs are packaged in hand rolled rice paper wraps.

2 mangoes
2 apples
1 orange or lemon
2 kiwis
1 carton raspberries
fresh mint
rice paper wraps

1. Cut mangoes and apples into matchsticks. Squeeze orange or lemon juice over apples to prevent browning.
2. Peel kiwis and slice into rounds.
3. Submerge rice paper in warm water for about 2 seconds, until wrap is completely wet but still stiff. Place on a plate or cutting board and wait 10-30 seconds for wrap to soften.
4. Arrange fruit and mint leaves on the top half of the wrap. Fold bottom of the wrap up and roll rice paper tightly around fruit.

Yield 6-8 rolls.
