Key Lime Pie

Key Lime Pie

This recipe is rich and tangy at once, with a heavy hit of lime.

INGREDIENTS

Crust
2 cups graham cracker crumbs
2 Tbsp sugar
1/4 cup melted butter

Key Lime Filling
4 egg yolks
zest of 1 lime
1 cup of lime juice
2 1/2 cups sweetened condensed milk

METHOD

Crust

1. Mix all ingredients in a bowl and using a large spoon press into a 10-inch pie pan.

2. Bake in a 300°F oven for 10 minutes. Set aside.

Key Lime Filling

1. In a mixer, place egg yolks and lime zest and whisk until fluffy.

2. Drizzle in sweetened condensed milk. When all the condensed milk is incorporated lower the mixer speed and add lime juice. Mix for 1 more min.

3. Pour mixture into the pie crust and bake in at 250°F oven for 20 min.

4. Remove from oven and chill before serving.

5. Serve with freshly whipped cream, mint and key lime slices for garnish.

Yield 1 10” round pan
