Strawberry Sorbet

Manitoba strawberries ripen in early July with U-Pick farms open for about four weeks. See the Prairie Fruit Growers website or call 253-7425 (toll-free 1-877-33BERRY). This cool, icy palate cleanser trumpets the pure essence of strawberry.

­2/3 cup sugar
2/3 cup water
3 Tbsp corn syrup
3 Tbsp lemon juice
2 cups fresh strawberries

1. In a saucepan on high heat bring all ingredients to a boil. Simmer until sugar is dissolved.
2. Purée with hand blender or food processor until smooth. Strain through a sieve. Chill overnight.
3. Use ice cream maker to make sorbet.

Yield 2 cups sorbet
